1/2 stick butter, sliced
1 onion, cut into slivers
12 small red potatoes
2-3 teaspoon Paula Deen’s House Seasoning
2 cup chicken broth plus more if needed
1/4 cup bacon grease
1/4 lb salt pork, sliced
3 lb fresh green beans
pepper, to taste
Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.

I just made the green bean and potatoes dish! Excellent. I did not use bacon or pork. I rinsed the fresh green beans cut the ends off and placed them on the stovetop in hot chicken broth about 25 minutes. Meanwhile I cut some red potatoes into small chunks and seasoned with salt, pepper, and paprika then poured them into the chicken broth with green beans. I added more seasonings (I used Mrs. Dash, Paprika, Salt, Pepper). Let them steam and simmer for about 25 minutes or longer and delicious!!!! I made Paulas pot roast in the crock pot so they all were wonderful together! I also made a homemade no back cream cheese peanut butter pie with a pretzel crust and homemade chocolate whipped cream topping and chocolate shavings for dessert! Should of used Bacon instead of salt pork, needed more flavor. Had to fix it.

Tweaked you recipe by adding potatoes and two cloves of garlic split to boil and then add French haricots verts at the end long with two soft cubes of chicken bouillon. Let them steep and then tale out with tongs and add butter or balsamic vinegar over the top. But it's the bean and potato combination that matters.thanks Paula! Mary Kay from Indiana

Since childhood fresh green beans with new potatoes has been my favorite dish. This recipe has taken it to a different level. If I could I would have it everyday. OMGoodness! These are amazing!!! Just like my Mammaw would make! I always wanted to know how she made them... know I know. Thanks, Paula! Second time around, I cut down on the House Seasoning. The salt pork really adds enough for DH. I actually made a batch with canned green beans (I was in a pinch.) They weren't bad but fresh is MUCH better. Canned beans need less cooking time, obviously. THanks again!

These are the green beans and new potatoes I grew up on and loved. When I tried to make them as an adult, I never could get them to taste like I remembered and I realized that I had waited too long...the kin folks that had made them had passed on. Not only do these taste fantastic, but they brought back all those wonderful memories.
