Recipe Courtesy of Paula DeenServings: 8 to 10 servings
Prep Time: 25 min
Cook Time: 1 hour
Difficulty: Moderate
4 bay leaves
3 chicken bouillon cubes
1 onion, peeled and diced
1 teaspoon Paula Deen Lemon Pepper Seasoning
3 cloves garlic, minced
1 2 1/2 to 3-pound fryer (chicken), cut up
1 1/2 to 2 teaspoon Italian seasoning
3 1/2 quart water
kosher salt and pepper to taste
For Step 2:
2 cups sliced carrots
2 cups sliced celery, with leafy green tops
2 1/2 cups uncooked egg noodles
3 tablespoons chopped fresh parsley
1 cup grated Parmesan cheese (optional)
3/4 cup heavy cream (optional)
1/3 cup cooking sherry
1 cup sliced mushrooms
Fresh parsley
2 teaspoons chopped fresh rosemary
Paula Deen Seasoned Salt to taste
freshly ground black pepper to taste
crusty french bread, for serving
For the stock: add all ingredients to a soup pot. Cook until chicken is tender, about 35 to 45 minutes. Remove chicken from pot and set aside to cool. Remove and discard bay leaves and onion. You should have approximately 3 quarts of stock. When chicken is cool enough to touch, pick bones clean, discarding bones, skin, and cartilage. Set chicken aside.
For the soup: bring stock back to a boil, add carrots, and cook for 3 minutes. Add celery and continue to cook for 5 to 10 minutes. Add egg noodles and cook according to directions on package. When noodles are done, add chicken, mushrooms, parsley, sherry and rosemary. Add Parmesan and cream, if using. Cook for another 2 minutes. Adjust seasoning, if needed, by adding seasoning salt and pepper. Enjoy along with a nice hot crusty loaf of French bread.

Prepared this for my book club ladies. It was a big hit! Served soup with crusty bread, a tossed salad and a decadent chocolate dessert. I always go to Paula for delicious dishes.

I tried this recipe since I had almost every ingredient at home (I was planning to make a traditional chicken noodle soup for dinner), and I was floored. I could not believe how perfectly all of the flavors blended! This is definitely the best chicken noodle soup that can be made at home. I will not even go on about how it has almost completely restored my lost voice seemingly overnight!
In short, you are missing out if you do not try this yummy soup.

This is the best soup ever.... My whole family devoured it. I did not add the sherry because I did not have any. Seriously, try this soup. You will love it. I am going to make a huge batch for those upset tummy sick days and freeze it for emergency. I also tried it before I added the cream and parm cheese and it was still so delicious..I used a organic chicken base powder instead of bouillon cubes. Other than that I followed the recipe as written. Another keeper, Thanks Paula!

Dear Paula, I'm home sick today. Can you please whip up a batch of this and send it my way? Thanks.

This is a wonderful soup! Instead of sherry, I used a combination of white wine vinegar and apple cider vinegar, with a splash of lemon juice. It was delicious!

Do you have a recipe for the best corn chowder and vegetables (a Bisque) with prawns you can e-mail me before Aug. 21, 2011. I had tried the shrimp bisque from Wolfgang Puck and it was wonderful with the driest sherry. I have not had this dish since my birthday party in the 1970's in Georgian formal dining set table. I would like for my lover to share this with me too. Much Appreciated, Cowhidewhite@live.com
