Zucchini Bread

Ingredients:

2 cup grated zucchini
1/3 cup water
4   eggs, beaten
1 cup vegetable oil
3 cup sugar
1 teaspoon ground cinnamon
2 teaspoon baking soda
1 teaspoon ground nutmeg
1 1/2 teaspoon salt
3 1/4 cup all-purpose flour
1 teaspoon lemon juice
1 cup chopped walnuts or pecans

Directions

Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes.

my daughter in law, Jerri Ann made this bread and my husband said this was the best bread he has ever eaten! such a compliment to her good cooking.

So great! But I found the first batch a bit too sweet so I cut the sugar to two cups and it was perfect. I also added an extra cup of zucchini (fresh from our garden). Our neighbors had just given us a dozen fresh eggs from their chickens so this was really a treat. I prefer making muffins and cooked for 15 minutes and then the fork test. Yummy..

I used about 1 cup less sugar and this was still sweet and delicious. The family ate up the bread in a matter of hours. LOVE this recipe.

Just made this awesome recipe for the first time! Most of the time being a girl from the south I would just fry it! But wanted to do something different for my family. I found this recipe and since it made 2 loaves, I shared a loaf with a friend and one for my family! My friend quickly called and said that it was the best thing she had ever eaten! My kids were thrilled to find a nice warm loaf waiting for them when they got home from school! They said that it was simply amazing!!! When you can get a teenager,preteen and a kindergartener to say that something was Amazing!!! You have done great!

We LOVE, LOVE, LOVE this! We had a coworker give us a huge zucchini from his garden in a trade for tomatoes from our garden. I knew that it was tooo big to cook, so I turned to a fellow Southerner, Paula Deen! She would know! I made this and kept one loaf for our family and shared a loaf with a friend! The kids were thrilled to have another Paula Deen goodie waiting when they came home and my friend quickly called and said that it was the best bread she had ever put in her mouth!!! I can't wait to try the chocolate chip one!!! That will be the next one...tomorrow!!!

I made a double batch of this scrumptious bread. I peeled then grated the zucchini, so my nephew didn't know it was in there. He loves his Paula Deen cinnamon bread. I plan to make more tomarrow. We just love you and your recipes!!! I will try the chocolate chip one next.

I just made Zucchini Bread for the first time, also this is my first time ever eating Zucchini Bread and I am now hooked on it. Everyone in my family absolutely loved this recipe and said it was by far the best tasting bread they have ever eaten.
