Sweet Potato Bake
 
 

Ingredients:

3 cups mashed sweet potatoes
1 cup sugar
1/3 cup butter, melted
2 eggs
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup heavy cream, half and half, or whole milk

Topping:
1 cup brown sugar
3 tablespoons butter, melted
1/3 cup all-purpose flour
1 cup pecans or walnuts, chopped

Mix together with fork; sprinkle over top of casserole.

Directions

Preheat oven to 325 degrees. Mix all ingredients together except for cream. Beat with an electric mixer until smooth. Add cream;mix well. Pour into greased casserole dish ( 1 1/2 quarts). Add topping. Bake for 25 to 30 minutes.

I have been making these for about 5 years now for Thanksgiving AND Christmas... It is always requested! Must use the Heavy Cream... worth the extra calories! Yummmmmm!!!!! I was never a fan of sweet potatoes until I made this dish... it sounded delish, and went over VERY well. It's now a staple at our family gatherings!

My mother passed away a year ago so this past Thanksgiving was turn to do it all on my own. I decided to turn to the tried and true\, Paula Deen, for my sweet potato recipe. I chose this recipe but when I made the dish, I erroneously added the topping ingredients to the base recipe. I thought, "uh oh - well, what the heck!" So I made another batch of topping to add on top, baked it and can i tell you when I say it was the star of the show - I mean EVERYONE licked their chops for more! I even had to share the recipe, along with my error, with a friend for her to share at her family gathering at Christmas! DELISH!!!! and if you mess up - go with it, it might just be a huge success!!! Thanks Paula!!

Sweet potatoes of the GODS!!! Everyone is asking for the recipe and it will now be made very frequently in our home. This is a MUST have for holiday gatherings and it is so easy to make. Thanks Paula! (P.S. - use the heavy cream)

This was the greatest sweet potato bake ever. I doubled the recipe and used less sugar but it was still the best thing on the menu for Thanksgiving. My entire family thanks you for the great recipe. Look forward to the next one I try. Happy Holidays
