Southern Cornbread Stuffing
 
 

Ingredients:

Cornbread, recipe follows
7 slices oven-dried white bread
1 sleeve crackers (recommended: Saltine)
8 tablespoons butter
2 cups chopped celery
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage, optional
1 tablespoon poultry seasoning, optional
5 eggs, beaten

Cornbread:
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil

Directions

Preheat oven to 350 degrees F.

In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside.

Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 to 60 minutes.

Cornbread:
Preheat oven to 350 degrees F.

Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.

I have made this receipe for a few years now. I am from Mississippi and my brother-in-law is from Arkansas. This is as close as we get to the South here in Wisconsin! Thank you Ms. Paula for your wonderful receipes and advice. Some things just don't compare to the "Southern Traditions"! Thanks again!

Paula, Thank you so much for this recipe. It is so close to my mother's. She passed away before I could get her to write it down. I have a big family and we didn't know what we would do without Mom's dressing. I made this for Christmas last year and I don't think there was a dry eye or empty belly in the house. This is the closest cornbread dressing to my grandmothers that I have been able to find. I have used this recipe now for the last 3 years and absolutely love it. Thank you Ms. Dean for the wonderful dishes you share with us.

I am so happy that I found your website. This is my first thanksgiving that I am making my whole meal... This Stuffing is so good and easy.
