1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant gelatin
1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Strawberry cream cheese frosting, recipe follows
Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
1/2 teaspoon strawberry extract
7 cups confectioners’ sugar
Freshly sliced strawberries, for garnish, optional
Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
For the frosting:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners’ sugar, beating until smooth.
Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

THIS IS ONE OF THE BEST CAKES I HAVE MADE IN A LONG TIME. IT WAS PERFECT! MY HUSBAND AND FRIENDS LOVED IT. I FOLLOWED THE INSTRUCTIONS EXACTLY WITH THE PUREED STRAWBERRIES. THE CAKE LAYERS WERE SUPER MOIST, EVEN AFTER THE CAKE SAT IN THE REFRIDGERATOR CUT AND UNCOVERED. AS FOR THE FROSTING,WHAT CAN I SAY....DELICIOUS! BECAUSE THE RECIPE ONLY CALLED FOR 1/4 CUP OF THE PUREE TO BE USED, I WAS ABLE TO PRODUCE A FROSTING THAT HAD A THICK CONSISTENCY WHICH MADE THE SPREADING OF IT A BREEZE. IT WAS EVEN EASY FOR ME TO PLACE A THICK LAYER OF THE FROSTING IN BETWEEN THE CAKE LAYERS AS WELL. THE SMOOTHNESS OF THE FROSTING HELPED ME TO ACHIEVE A VERY PROFESSIONAL LOOK AROUND THE SIDE OF THE CAKE AND IT MADE IT EASY TO PLACE A BEAUTIFUL DESIGN ON TOP AS WELL. I made this cake for the 4th of July. Even people sho dont like cake loved it and the plate was licked clean by my 5 year old niece. Only thing was the frosting was slowing sliding down the cake. I am siding with the fact that it was about 90 out that day, but will add more powdered sugar next time. Planning on makin it again this weekend. Thanks Paula!!

I have been making this cake since I was in my teens. It is so good & moist. The original recipe I have calls for a 10oz package of frozen strayberries & it works fine. We always baked it in a bundt pan & made a glaze with powder sugar & reserved strawberry juice. YUM!

This is a question - - not a review. I plan to make the cake, but I want to be clear on the directions. It doesn't say if you need to drain the strawberries after thawing them (and before you puree them). Some comments said there was too much liquid - so I'm wondering if the berries need to be drained. Perhaps you could put that in the directions? Thanks.

This cake is wonderful! I tweaked the recipe a bit by using about half the sugar for the frosting and adding more of the puree, which made it more like a creamy glaze. I also poked holes in my cooled cake layers and spooned on some of the puree and rubbed it in which made the cake super moist!!!

Good tasting cake.The puree thats left over when serve I put the puree on the bottom of the plate then cut the cake and put on top of the puree very good.And I used 10oz strawberry and the recipe came out great I cooked the cake in a 13x9 pan easy for me didnt have to take the cake out of the pan once was cooled just put the frosting on top. This recipe is so very good. I the frosting a little different by cutting down the amount. After I frost the cake I make a ganache and place over the frosting. Just like a chocolate covered strawberry!

Oh Paula, that is the cake recipe my aunt gave me 30 years ago. It is by far the most moist cake and a strawberry lovers favoriate!!!(ME) I make a butter icing and instead of using milk I use some of the strawberry juice.

The best cake ever. I did alter the amount of strawberry used in both the cake and in the icing and i had to cook it for about 30 mins instead of 20, but the cake is absolutely delicious!!! Doesnt last 10 minutes at a family gathering!!

This was the worst cake ever to make. It was a disaster. Both of the cakes were not done after the 20 minutes and after I baked them for about 35 minutes they fell when I took them out of the oven. I was horrified. This is an expensive recipe. The icing was good. That's the only good thing about this recipe.

This family has been making strawberry cakes since forever and I must say, this is the YUMMIEST! Mistakenly used strawberry cake mix. Turned out heavenly...I do suggest using just half the amount of strawberries for the frosting. A true HIT for my husband because of the "tang" (he prefers raspberries to strawberries). I don't know if I agree with "tangy". I feel the "tang" and the "sweet" are pretty balanced. Perfection.

This is a wonderful cake!! I have made this recipe as is, and I made this recipe into cupcakes for a birthday party. I used the cream cheese frosting from her red velvet cupcake recipe for the cupcakes instead. I wanted a hint of lemon flavor in the frosting, so I added some lemon zest and juice to it. They were to die for!!!

Simply DIVINE! Loved this one! I did have to bake mine longer than the time given but I think it is because my frozen strawberry puree was still really cold when I added it to the batter. I didn't realize it until I picked up the pans to put them in the oven and they felt like ice. When I make this again, I am going to allow the puree to reach room temperature before adding and I think the time will be correct.

This cake was delicious and a big hit at Christmas. I cut the strawberry puree back to 10 oz and used less water and oil than the recipe called for.The only problem was that it was gooey in the middle. Stacking the cakes on top of each other proved to be very difficult. The cake didn't look very good, but it tasted good.

I ordered the magazine with this cake on the cover, because it looked so good. I am so glad I did... This cake is seriously amazing!!!! I baked mine in a 9X13 pan and I took it to work and everyone loved it. The frosting is a little soft, so I am not sure how it would do on a layer cake, but it worked great for my cake. Delicious!

I also agree that a 15oz package of frozen strawberries with syrup is wayyy too much for the cake. I only made the cake from this recipe and did not make the icing as I already have a cream cheese icing recipe that I really like. The cake had way too much liquid in it using the 15oz package of strawberries. And yes, I did follow the directions exactly. I had to try it again reducing the amount of strawberry puree and other liquids before the cake would even set.

I tried this recipe twice. The first time I followed it exactly as written and there was way to much liquid; the cake fell and never cooked through in the center. Just for giggles I baked it for an hour (I already knew it was headed for the garbage can anyway) and the edges were brick hard and the center was still runny. I had triple checked all of my measurements during the mixing, so I know I put in exactly what was requested. Then I read through the reviews which I should have done from the beginning. The second time I followed the suggestions of another poster and reduced the amount of pureed strawberries to a 10 oz package instead of the 15 oz package. I also reduced the amount of water and oil by a couple of tablespoons. This time the cake rose well and cooked through fine in a reasonable amount of time, but it was extremely dense and heavy; more consistent of a fruitcake or dense banana bread. The flavor was great, but this really didn't turn out cakey like I was expecting. So it's a thumbs up for the flavor, but thumbs down on the directions and the resulting texture. Sorry Paula, I usually love your recipes, but I just can't seem to get this one to work for me!

If this is the same cake that I ate at Paula Deen's restaurant at Harrah's Casino in Tunica, MS, it is proabaly THE best cake I've ever had. And I didn't even know I like strawberry cake. This is a great recipe - but is written with a typo. Ingredients list should show: 1 (10-ounce package frozen strawberries in syrup, thawed and pureed) If 15 oz. of frozen strawberries is used, the cake has too much liquid, the middle sinks, & the cake texture is all wrong! I have tried a lot of the recipes on the site but this is the only one we have not cared for. If you don't like jello you probably won't care for this recipe either. The cake is moist but it is not a "cake-like" texture. We also found it to have an artificial strawberry flavor. I may try again and leave the gelatin out.

This is the most moist and 'delicious' strawberry cake that I've ever had and the recipe is very easy to follow. The recipe for the frosting tasted like a strawberry milkshake. My family loved it. Since finding this recipe I've tried a different fruit using the basic recipe. So far I've adapted the recipe and used peaches. Just as wonderful and delicious.
