Magical Peanut Butter Cookies

Ingredients:

1   egg
1 cup sugar, or 1 1/3 cup sugar replacement (recommended: Splenda)
1 cup peanut butter, creamy or crunchy
1 teaspoon vanilla extract

Directions

Preheat the oven to 350 degrees.  Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, 1 cup equivalent of the Splenda, the egg, and vanilla, and stir well with a spoon.  Roll the dough into balls the size of walnuts.  Place the balls on the prepared baking sheet.  With a fork, dipped in Splenda to prevent sticking, press a crisscross design on each cookie.  Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining Splenda. Cool slightly before removing from pan.

Super sweet cookies, super delicious, but very oily. I understand why it doesn't make a whole lot, you wouldn't be able to eat many of them without going through a gallon of soy milk. Another delicious recipe from Paula.

I make 4 dozen of these cookies a week. My husband and his mother fight over them. I thought they would get tired of them, but they eat them for breakfast, lunch, and dinner. GREAT COOKIE!!!!

Wow, Wow, Wow!!! Paul you did it again. I made these a long time ago, lost the recipe, then found again on your site, so glad!! This is by far the easiest cookie to make, and only 4 ingredients. Keep on pleasing us Paula. Cant go wrong with this cookie. I used regular sugar though. never mind this imitation stuff. Thanks again Paula.

This cookie is very delicious! I just literally made them and they're so good! Just one thing, the sugar-rolled cookies become carmalized on the bottom because of the mix of butter and sugar. But still really good! There's no need for me to use all of those other ingredients like flour because these cookies rock! oh and im 13 and made these so they are very easy to make!

I was given this recipe in high school and have made it more times then I can count! I have made one change over the years though... was out of granulated sugar one day and subbed brown sugar with great results. I sometimes add some chocolate chips too.

This recipe saved the day. I have added it to the quick list and 'what a 5 yr old can do in the kitchen.' That little boy was so proud of his cookies and we cut the sugar so it would not make us all crazy or fat. The peanut butter with honey helps cut the sugar way back.

This recipe is wonderful!! I have been using it for over 20 yrears. My kids have always enjoyed making this recipe and I have loved them making it too. Without the flour, it makes much less mess and with fewer ingredients it holds the attention of very young chefs!

This was the easiest, quickest, BEST peanut butter cookies I have ever made!! You don't want to score the cookies to much with the fork though because if they get too thin they'll break and you'll have to eat them!!

I have been using this recipe for over twenty years. We add 2 or 3 m&m's or a hershey kiss after making crisscross design(I use a meat tenderizer to make the design)take just the tip-top of kiss off before placing on cookie.
