Lots O’Meat Lasagna

Ingredients:

1 1/2 lb ground chuck
1 lb ground Italian sausage
1   onion
2   cloves garlic, minced
2 teaspoon ground oregano
1 teaspoon ground basil
1/4 teaspoon salt
1/4 teaspoon pepper
1   (14.5-ounce) can diced tomatoes with basil, garlic and oregano
2   (15-ounce) cans tomato sauce
1   (6-ounce) can tomato paste
1 1/2 cup small curd cottage cheese
1   (5-ounce)package grated Parmigianno-Reggiano
2 tablespoon freshly chopped parsley leaves
2   large eggs, lightly beaten
9   oven ready lasagna noodles
2   (8-ounce) packages shredded mozzarella

Directions

Preheat oven to 350 degrees F. 

In a large saucepan, combine ground chuck, sausage onion and garlic. Cook over medium heat until meat is browned and crumbled; drain.

Return meat to pan and add oregano, basil, salt and pepper. Add tomatoes, tomato sauce and paste. Bring to a boil, reduce heat and simmer 30 to 45 minutes.

In a small bowl, combine cottage cheese, Parmesan, parsley, and eggs.

Spoon 1/4 of sauce into bottom of a 13 by 9 by 2-inch baking pan. Place 3 uncooked lasagna noodles on top of sauce. Do not overlap noodles. Spread 1/3 of cottage cheese mixture over noodles, top with 1/4 of sauce and 1/3 mozzarella cheese. Repeat layers, ending with sauce, reserving 1/3 of mozzarella cheese. 

Bake 45 minutes. Top with remaining cheese and bake 15 minutes or until hot and bubbly. Let rest 10 minutes before serving.

This recipe is so yummy, and it is very easy, too. Your friends will be so impressed! However, the serving size says 4, but that is wrong. I can get about 8 servings out of it.

My family had suffered all week from "instant meals" because I was ill with pneumonia. I wanted to try something new and tasty to celebrate the end of my illness. My family loves pasta, and this recipe sounded delicious! Not only was it SUPER SIMPLISTIC, and fairly cheap as well, it was AWESOME! It was a big hit with my twin girls, and they were excited to know they could have left-overs the next day! Thanks, Paula!!

My daughter recently found out that her boyfriend loves pasta. She decided to make him lasagna for a surprise anniversary picnic. Their one year anniversary date was 9/23/09. She didn't have a recipe for lasagna so she called me for a recipe. I didn't have one either. I did a search on the internet for one of my favorite Food Network chef's Ms. Paula Deen! I went to Ms. Paula's website and found a recipe for Lots O' Meat Lasagna because her boyfriend loves anything with lots of meat in it. She found the recipe easy to follow. It was a hit! Her boyfriend loved it! He said it was excellent! It was a little too meaty for my daughter's and my taste but it was very good. We like lighter more vegetable type pasta dishes with some meat. You were a life saver. My daughter and I will be adding this to our personal recipe collection and we will be looking through your recipes for a vegetable lasagna dish. Thanks Paula!

This is the best lasagna EVER! My mom hates lasagna and even she liked it. The only thing is it needs a lot more Mozarella!!!

If I could give this Lasagna a 5++ I would. It is great. My mother-in-law is the queen of Lasagna but after I made this she lost her crown. The sauce is worth the work. I could eat it with a spoon.

I have made this recipe several times now for my family. My husband says he hates the store bought lasagna now. This really is not that time consuming to make considering it provides two meals for my family of four. We love it.
