Lemon Blossoms

Ingredients:

4   large eggs
3 1/2 ounce package instant lemon pudding mix
18 1/2 ounce package yellow cake mix
3/4 cup vegetable oil

Glaze:
4 cups confectioners’ sugar
1/3 cup fresh lemon juice
grated zest of 1 lemon
3 tablespoons vegetable oil
3 tablespoons water

Directions

Preheat the oven to 350 degrees.

Spray miniature muffin tins with vegetable oil cooking spray.  Combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes.  Pour a small amount of batter, filling each muffin tin half way. Bake for 12 minutes. Turn out onto a tea towel.

To make the glaze, sift the sugar into a mixing bowl.  Add the lemon juice, zest, oil, and 3 tablespoons water.  Mix with a spoon until smooth.

With fingers, dip the cupcakes into the glaze while they’re still warm, covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat.  Place on wire racks with waxed paper underneath to catch any drips.  Let the glaze set thoroughly, about one hour, before storing in containers with tight-fitting lids.

I have made these many times and always get rave reviews! In fact, friends who have eaten them always request that I bring these when we get together! I have made changes, however, to the glaze. I use the zest of three lemons, and I use 1/2 cup of lemon juice. Also, I double the glaze recipe so I can double dip them!

I have been making these little delights since I first saw Paula do them on her show many years ago. They are delicious and everyone loves them. I have had to make some changes in the preparation though. Before I turn them onto the tea towel, I let them sit in the pan for about 3 minutes. Then I loosen them with a knife so that they will fall out easier. I turn them upside down on the towel and wait another 2 to 3 minutes before dipping them into the glaze. When I saw Paula in San Francisco this year, I told her how much we enjoyed the Lemon Blossoms, and her husband, Michael said to double dip them and I have to admit he was right. So I make more of the glaze. Thanks Paula for another great recipe.

These are absolutely delicious!!! However - mini muffin pans always ALWAYS give me fits when I try to take the food out. Stick every darn time. Also, don't use a tablespoon measure to fill them or they'll be too full. I actually ended up scrapping the entire first batch. I'm going to try them again today - because what I tasted was positively delicious.

Watched as you made them on t.v. and was going to a pot-luck that evening and was fortunate to have everything on hand to make them. Most everyone asked for the receipe and was so glad to share it with them. I sprayed my pans very heavy and they came out with no problem at all. Easy to make and a great flavor. This one is a keeper!

Oh!, come on out of there!... These little gems stick like crazy, even if you brush oil on pan. After several tries, found my Baker's Joy spray can and THEN they popped out like seen on TV. Not much taste except for the glaze. Would add 1/4 c lemon juice & zest to batter next time, but don't think there will be a next time.

This recipe is easy, and extremely easy to bake, but you do want to time your glaze prep appropriately so that the "muffins" are still warm when you dip them in the glaze. And, since the recipe yields 5 dozen, it's important to have enough cooling rack surface area! Also, although the recipe doesn't call for it, I use a non-stick tin and I spray it with a non-stick spray, and I still get some stuck! Lightly greasing the cups may be my next option. Oh, and I used jumbo eggs instead of large, with my last batch. I won't do this again...

I was watching your cooking show one day during my lunch hour and thought I'd write down this recipe. These are the best. I have been making them for at least the past 3 years and they are a big hit every time I bake them for anyone. I have even passed your recipe on to friends. So easy to make and so delicious too. These are delicious little muffins! We, recently, took a tinful home to our sons - they were gone in a few minutes - only crumbs left behind! I use a mini-muffin tin and I recommend, lightly, greasing each muffin compartment - not spraying it with non-stick spray. I've tried it both ways - they will not stick when you grease them, but, them seem to when you only spray them. Just a tip. These are light and delicious and very easy to make! These are a definite keeper to made again and again. Thank you, Paula! Debbie Collinge

they are always a hit where ever i take them.. i also add lemon zest & juice to the cake mix & i mix the pudding mix w/ about 1/2 to 1 cup of milk ..makes them more moist,as they r baking. the glaze is the kicker .. the best part of the cakes.. yummy

These are such a hit at our sr. parties. There is never any left over no matter how many I make (smile). The lemon makes it so good. I always get asked for the recipe, so now when I take them anywhere, I go with a stack of recipes cards for them to have. Love your recipes and have some of your cook books. I like butter also and it is starting to show on me. Nothing tastes as good as butter in iour baking (smile).Keep them coming Paula.

I made these at the request of someone with a lemon tree & have been playing since, including orange, strawberry & chocolate peppermint for Christmas. These are great, fun, and easy to adapt to new flavors. Thanks Paula - you get all the credit for these!!

These are delicious and the glaze is to die for! Only reason it's getting 4 stars instead of 5 is because even with non stick cooking spray these bad boys still were hard to remove from my tin.

These came out SOOOO GOOD! The batter is very thick. Cooking it longer than the 12 minutes helped get it cooked all the way through. Instead of dipping it into the glaze I drizzled the glaze over the tops with a fork.

Delicious.........however, I had to add up to a cup of water. Batter was so thick the mixer stalled and the first batch fell flat in the center and was nothing but gooey. Added the water and they came out more cake-like but delicious.

I made these for Thanksgiving 2008 and it was talk of the dinner. They taste like rays of lemon sunshine in your mouth. My family has requested I make them again this year. They are so easy to make.

I made these for a wedding shower and what a hit they were!!! My hubby couldn't stop going to the kitchen to "test" them before the guests arrived. Makes a bunch- so you will be cooking and dipping for awhile, but so worth it!
