Corn Casserole

Ingredients:

1   15 1/4-ounce can whole kernel corn, drained
1   14 3/4-ounce can cream-style corn
1   8-ounce package corn muffin mix (recommended Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
Shredded Medium Cheddar Cheese

Directions

In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, and butter.  Pour into a greased casserole.  Bake at 350 degrees for 40 to 45 minutes, or until golden brown. Top with generous amount of cheddar cheese and return to oven for another 5 minutes until cheese is melted.

LOVE IT! I made it as part of our "Mother's Day" dinner. A few things: added some onions, egg whites (left over from my pie), and a few dashes of hot sauce. It took about 55-60 min. to bake...a little longer that what Paula recommended. BUT, it was worth it. This recipe was very similar to my Grandma's corn pudding. Thanks, Paula...this is a keeper (especially since it was so easy to put together...which my level of expertise :) )

I followed the recipe to the tee and it was soupy. I had to cook it for 1 hour and 10 minutes to get it golden brown.

My teenager loves this so much I usually have to make a big batch of it. My hubby hates the Jiffy Mix Cornbread (too sweet he says)so I found a White cornbread mix that does not have sugar in it and it is still good. Everyone should try this.. its excellent!!

This recipe is brilliant. I've made several different versions of corn casserole over the years and this one is BY FAR the best. I never would've thought to add the Jiffy corn muffin mix on my own, so THANK YOU!! I added Salt and Pepper to the batter and 1/2 cup of freshly chopped onion. DELICIOUS and so very easy!!

My family loved this recipe. Because it was a little bland, I added pepper jack cheese mixed with cheddar to give it a little kick, plus added a pinch of salt & pepper and a bit of hot sauce.

I fixed a Paula Deen New Years Dinner - Black-Eyed Peas, Collard Greens and Corn Casserole. My brother was blown away. He ranted and raved and had two helpings of everything. This recipe is great! I changed it up a bit and added 1/2 cup of brown sugar and a tablespoon of honey. I left the cheese out also. And, it made an amazing corn cake that tastes wonderful as a dessert. If you add a scoop of vanilla ice cream it's even better! Thank you for this recipe Paula! You are amazing!!

I made a double batch of this on Mother's Day. It was a hit! None left over and I was told I should have made more! WOW! I think next time I might add some green chilies and instead of topping it with cheese I might add some to the batter.

I have been making this recipe for years now, so something very close. We also add 1 egg, though! Most of my family loves it, but my husband HATES it! I guess after so many years of eating plain dry corn bread he can't get the idea of eating it wet. I'm the other way around, I now hate DRY corn bread. Thanks for the recipe and will have to try it with cheese next time.

I make this casserole many times a year for holidays and dish-to-pass parties. I get great reviews every time I make it. I don't add the cheese or I don't drain the whole corn and it tastes great warm or cold. It's very easy to make. Don't be scared that it looks very soupy before you cook it because it will stiffen up when it bakes.

I loved this recipe;so easy to make and delicious!!! I did a slight modification; used low fat sour cream (since it's what I had) and put one can of corn in the food processor in order to cream it. Yum, yum, yum!!!!

Usually at holiday meals my family has corn that my mother bought during the summer, cut off the cob and froze. Last year we weren't so lucky and a friend suggested I try this recipe.
