Broccoli Casserole

Ingredients:

2   10-ounce packages frozen chopped broccoli, cooked and drained
1 cup Mayonnaise
1 cup Grated sharp cheddar cheese
1   10 3/4-ounce can condensed cream of mushroom soup
2   eggs lightly beaten
2 cup crushed Ritz crackers
2 tablespoon butter, melted

Directions

Preheat oven to 350.  Spray a 13 by 9 inch baking dish with vegetable oil cooking spray. In a large mixing bowl combing, broccoli, mayo, cheese, soup and eggs.  Mix well with a metal spoon.  Place the mixture in the prepared baking dish.  Top with the crushed crackers and pour the melted butter evenly over the crackers.  Bake for 35 minutes or until set and browned.

This recipe is awesome! I have never, in my life, liked broccoli. I have tried it every way possible, including broccoli casseroles, but I have hated every one of them. My husband decided to make this one night and it was the best thing ever. I loved it! So, I guess that makes this THE best broccoli casserole in the history of broccoli casseroles! Way to go Paula for finding a way to get a broccoli hater to eat broccoli! Thanks!

Awesome! I made a few changes...I added a small can of French,s fried onions a little milk to make it creamier and used ritz wheat crackers for the topping most definitely a keeper even my 2 year old wanted seconds! Kmp

I make this casserole all the time. I also put onion in mine, gives it a better taste. I use Cream of Broccoli/Cheese soup instead of Mushroon soup. As my topping, I mix Pepperidge Farm Stuffing and melted butter together to put on top of the casserole, um um good!!! Smells heavenly cooking in the oven. Try it, I'm sure you will love it.

I have used this recipe for years, i added a small grated onion. I have also cooked it in the crock pot on low for 2-3 hours until firm, then add the buttered crackers on top. The Crackers can be lightly toasted for added flavor, It is easy to make ahead, then turn on, able to serve hot. Rhonda Spartanburg, SC

My family loves this recipe. I mix the butter and crackers together instead of pouring the butter on top. Otherwise, some of the crackers get missed.

This casserole was AWESOME I made it for our coca cola 600 nascar race get together and everyone loved it. My sister in law makes her version of this and when she tried mine she was a little upset because this one was better than hers. Keep making the GREAT recipes. I am 40 years old and feel like I am learning to cook all over again. You made the comment on one of your shows about doing simple recipes I for one think every thing we have tried so far has been AWESOME!!!!!!!!!!!!!!
